Well, today was a first for me. At least on my own. I do have foggy memories of cranking the pasta machine as a little girl in my mom’s kitchen. (It was my mom’s kitchen back then but today, today there is no question about it; while she may still cook the occasional meal it is most certainly my dad’s kitchen. Maybe someday the tables will turn in my home?) Anyways, with the move behind us, I was finally able to test out some of the fantastic gifts I received over Christmas (one being the pasta maker! Thanks Mama!). Yikes! What a mess. I am not known for my tidy cooking but this was over the top. Oh well at least it was my favorite kind. The kind that leaves your hands dry with flour and your tummy warm and satisfied. It took a while to get the hang of it and I am still no pro but I feel as if some definite improvement occurred.
First off I did not have soft wheat flour. To be quite honest I really did not know what that was. So I phoned the expert and was informed that plain old all purpose would suffice. I took 2 cups of the lovely dust and made a little bowl like so…
I cracked the eggs in and began swirling the fork around mixing the yolks with the whites and ever so slowly bringing in a little flour at a time, being very careful not to fully break any walls.
After a few squishes through the pasta machine at setting number one I remembered a few things from my days playing with the fun factory.
- It is much easier with smaller portions.
- Add flour generously to avoid sticking.
- And finally, fold it in half a whole bunch.
I don’t believe you can send it through the machine too many times but for some reason I never was able to get it any thinner than the 6 setting. Oh well, a little thicker fettucine never hurt anyone.
Miles woke up just in the nick of time! And with that, for the first time in his 28 months of life he just woke up, got out of bed, and wandered into the kitchen with out so much as a word. Made me jump when I saw him too. Paparazzi.
This truly is a project done more swiftly with help of another. Even better if that other happens to be two. What is more fun than cranking a pasta machine with the knowledge that soft buttery noodles lie ahead? Well, apparently not much for my boy. He cranked like there was no tomorrow, even when the settings got tough.
It was quite the workout for those little biceps. And I can say with total honesty he was actually very helpful! I had a hard time managing the cranking and the holding of the dough at the same time and his assistance was greatly appreciated.
Once the fettucine boiled to my liking, I tossed it with some sautéed leeks, garlic and parsley then sprinkled it with parmesan and lemon zest. Perfectly delicious.
