Out of butter. Out of bread. In need of a quick item to add to our supper and I have a hankering for biscuits. So this is what I made.
Mix one cup of quinoa flour and one cup of whole wheat, two tablespoons of baking powder and a pinch of sea salt. Stir in 3/4 cup of buttermilk or whole milk with a bit of white vinegar added along with two tablespoons of olive oil. Knead the dough in all-purpose white flour until it just forms a ball. Roll it out and cut into shapes of your choosing. I just use an upside down glass. Bake in a 400 degree oven for about 5 minutes and your rolling in the dough.
ps -this is how I got to start my day… not so bad I think! Hope your monday starts your week off just right.

i agree! the biscuits are very secondary to the baby lizard. its a chameleon! So cute and tiny.
